Monsters in the Garden

Our garden is producing a great amount of zucchinis at the moment, so we have been coming up with new and interesting recipes or finding ways of making our standard (but wonderful) Zucchini slice into something irresistible. With kids back at school/kinder, I sure could do with more options for school lunches, some healthy home made foods that, preferably, can be frozen for convenience!

We used the recipe in Stephanie Alexander's 'Kitchen Garden Companion'. It can be found in her 'Cook's Companion' recipe book as well.

That is one monster zucchini!! How did you manage to grow that?
